Strawberry Cake Mix Cookies
These deliciously soft and chewy cookies have all the flavor of a chocolate dipped strawberry, but are much more portable. This fool proof recipe uses a box of strawberry cake mix as the base, making it is easy enough for anyone to make. With only 4 ingredients and 5 minutes of prep, you can be eating these yummy Strawberry Cake Mix Cookies in no time!

1 box of strawberry cake mix (dry ingredients only - I used Betty Crocker) 1/2 cup vegetable oil 2 eggs (room temperature) 1/2 cup chocolate chips
Preheat oven to 350 F and prepare a baking sheet by lining it with parchment paper.
In a mixing bowl, combine the cake mix, oil and eggs until fully incorporated.
Gently fold in the chocolate chips.
Using a tablespoon scoop, scoop the dough onto the baking sheet tray, at least 2 inches apart.
Bake the cookies for 10-12 minutes, or until the cookies are just about set in the middle.
Cool for a few minutes on the baking sheet and then transfer to a cooling rack.
Strawberry Cake Mix: I use Betty Crocker and I think it should be okay to use other flavors as well.
Vegetable oil: can be replaced with 1/2 cup of melted butter. Even other oils such as canola and grapeseed would be great here.
Chocolate chips: feel free to swap with white chocolate chips or even M&M's.
