Buffalo Chicken Mac n Cheese

Mac n Cheese gets a spicy kick with the addition of buffalo sauce. This Mac n Cheese is the perfect meal for cold winter nights with the just the right amount of spice to give an extra oomph to the dish.

Ingredients

  • 500 grams boneless chicken chopped into bite sized pieces
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • 1/2 teaspoon paprika powder
  • 1 tablespoon oil
  • 2 cups cooked macaroni
  • 2 tablespoons butter
  • 1 small onion chopped
  • 3 tablespoons flour
  • 3 1/2 cups milk
  • 2 tablespoons buffalo sauce add more or less according to your taste
  • Salt and pepper to taste
  • 1/2 teaspoon paprika
  • 1 cup mozzarella cheese See Notes

Instructions

  • For the Chicken:
  • Heat 1 tablespoon oil in a frying pan, and saute the chopped garlic for 15-20 secs and add the chicken pieces. Saute for a 1-2 minutes and then add the paprika, salt and pepper. Cook until the chicken is cooked, about 5-6 minutes. Take off heat and set aside.
  • In a medium sauce pan, melt the 2 tablespoons of butter and add the onion. Saute the onion until is translucent, but do not let it brown. Add the 3 tablespoons of flour and cook for a few seconds, and then add the milk.
  • Stir constantly until the white sauce thickens, and then add the buffalo sauce, paprika, salt and pepper. Mix thoroughly.
  • In a large pot, add the cooked macaroni, buffalo white sauce and chicken. Mix thoroughly on medium heat, and finally add in the mozzarella cheese.

Notes

You can use any kind of cheese you like, and as much as you want.
