In a medium sized bowl, whisk together the dry ingredients: flour, baking soda and salt. Set aside.
In a separate bowl, combine the melted butter, white sugar, brown sugar, egg and vanilla extract. Whisk until fully incorporated.
Add the dry ingredient mix to the wet ingredients and mix until just combined. Do not over mix.
Now gently fold in the white chocolate chips and sprinkles.
Cover the bowl and chill for at least 30 minutes or upto 3 days.
Preheat oven to 350 F / 175 C.
When ready to bake, take out of fridge and roll into medium sized dough balls.
Bake for 8-9 minutes. Cookies will look undercooked, but will continue cooking on the baking sheet. Let cool to room temperature and then remove from the baking sheet.
