Garbanzo Bean Salad - with a Greek Lemon Dressing

Ingredients

For the Garbanzo Bean Salad:

  • 1 400 grams garbanzo beans (chickpeas) can
  • 2 English cucumbers sliced into quarters
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup feta cheese
  • 1/2 pomegranate seeds

For the Greek Lemon Dressing:

  • 3 tablespoons lemon juice
  • 3 tablespoons extra virgin olive oil
  • 1/2 teaspoon crushed garlic
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • Toss all the salad ingredients together in a bowl.
  • In a mason jar or a small bowl, whisk together all of the dressing ingredients until combined.
  • Pour over dressing and toss the salad, before serving.
  • Salad keeps well in the fridge for up to two days.
