For the Garbanzo Bean Salad: 1 400 grams garbanzo beans (chickpeas) can 2 English cucumbers sliced into quarters 1/2 cup cherry tomatoes halved 1/2 cup feta cheese 1/2 pomegranate seeds For the Greek Lemon Dressing: 3 tablespoons lemon juice 3 tablespoons extra virgin olive oil 1/2 teaspoon crushed garlic 1 teaspoon dried oregano Salt and pepper to taste
Toss all the salad ingredients together in a bowl.
In a mason jar or a small bowl, whisk together all of the dressing ingredients until combined.
Pour over dressing and toss the salad, before serving.
Salad keeps well in the fridge for up to two days.
