This Buffalo Chicken Mac n Cheese is the perfect warm and comforting meal for these cold winter nights. It's like regular Mac n Cheese but with a spicy twist added to the white sauce! Yes, I added buffalo sauce to the white sauce to give it more oomph and flavour. I didn't add a lot though because I was worried it would get too spicy for my toddler's taste. So you can add as much as you want.
So let's talk a little bit about why you should be making this extremely easy and delicious Buffalo Chicken Mac n Cheese tonight:
1.) It's cold. And this is the perfect cheesy carby dish that will warm you up.
2.) If you love spicy food and especially Buffalo sauce, then this is the perfect Mac n Cheese for you.
3.) It's easy. All you have to do is put the pasta to cook, make a simple 5 minute buffalo white sauce, and quickly saute the chicken in garlic and a handful of spices.
4.) Also, cos there's cheese. Lot's of it! This one reason should be good enough to make this recipe, right? Right! 😉

Buffalo Chicken Mac n Cheese
Mac n Cheese gets a spicy kick with the addition of buffalo sauce. This Mac n Cheese is the perfect meal for cold winter nights with the just the right amount of spice to give an extra oomph to the dish.
- 500 grams boneless chicken (chopped into bite sized pieces)
- 2 garlic cloves minced
- Salt and pepper to taste
- 1/2 teaspoon paprika powder
- 1 tablespoon oil
- 2 cups cooked macaroni
- 2 tablespoons butter
- 1 small onion (chopped)
- 3 tablespoons flour
- 3 1/2 cups milk
- 2 tablespoons buffalo sauce (add more or less according to your taste)
- Salt and pepper to taste
- 1/2 teaspoon paprika
- 1 cup mozzarella cheese (See Notes)
- For the Chicken:
- Heat 1 tablespoon oil in a frying pan, and saute the chopped garlic for 15-20 secs and add the chicken pieces. Saute for a 1-2 minutes and then add the paprika, salt and pepper. Cook until the chicken is cooked, about 5-6 minutes. Take off heat and set aside.
- In a medium sauce pan, melt the 2 tablespoons of butter and add the onion. Saute the onion until is translucent, but do not let it brown. Add the 3 tablespoons of flour and cook for a few seconds, and then add the milk.
- Stir constantly until the white sauce thickens, and then add the buffalo sauce, paprika, salt and pepper. Mix thoroughly.
- In a large pot, add the cooked macaroni, buffalo white sauce and chicken. Mix thoroughly on medium heat, and finally add in the mozzarella cheese.
You can use any kind of cheese you like, and as much as you want.
